Custard & Creme Recipes
1. Lemon Curd
Made by Maggie Stuckey, author of Country Tea Parties.
Ingredients:
- 4 Eggs
- ½ cup lemon juice
- 2 cups sugar
- 2 tbsp lemon zest
- ⅛ tsp salt
- ¼ cup butter
Directions:
- Beat together eggs, sugar and salt
- Stir in butter, lemon juice and lemon zest
- Cook in a double boiler until thick (about 30 minutes) stirring frequently
- Cool to room temperature; store in the refrigerator
- Curd will thicken when cold. Makes 1 ½ cups
2. Clotted Cream
Ingredients:
- 1 cup heavy cream
- 1 tbsp confectioner’s sugar
- ⅓ cup sour cream
Directions:
- Make clotted cream 1-6 hours before serving
- Pour heavy cream into a bowl and whip until soft peaks form
- Whisk in sour cream and sugar
- Beat until mixture is very thick
- Chill until ready to serve
Note:
For a creative twist, blend in 1 tablespoon Rose water or Jasmine tea.
