When asked by Chef Anthony Rush and General Manager Katherine Nomura to curate the tea menu for their award-winning restaurant Senia, we sought out unique teas that matched their cuisine and their innovative approach to food. One sip of this Honey Oolong from Lin Wang Tea, and we knew it was destined for Senia, the first restaurant in the world to serve it.
Lin Wang Tea in the small southern town of Taitung in Taiwan is a relatively young farm, but they have already won numerous awards. We spent time with the Wang family coming to understand their passion for crafting fine tea and learning the techniques of Honey Oolong.
Brew the first infusion for 3-4 minutes, subsequent infusions for 1 minute each, completely pouring off all liquid after each infusion. Pair this tea with anything chocolate.
